Cherry Raspberry Bars
  • 1/3cup organic sugar
  • 1 1/2cups all-purpose flour
  • 3/4cup butter or margarine
  • 2 eggsseparated
  • 1cup organic cherry raspberry preserves
  • 1cup broken walnuts
  • 1/2cup organic sugar
  1. In a bowl, combine sugar (1/3 cup), flour, butter, and egg yolks.
  2. Press into a greased 13-inch x 9-inch x 2-inch baking pan.
  3. Bake at 350° for 15 minutes or until golden.
  4. Cool.
  5. Spread fruit preserves over crust; sprinkle with nuts.
  6. In a mixing bowl, beat egg whites and sugar (1/2 cup) until stiff; spread meringue over nuts.
  7. Bake for another 25 minutes.
  8. To cut, use a knife dipped in hot water.
